Paella (serves 12)
Ingredients
150ml
olive oil - 600g short grain rice - 2 onions, diced - 2 red pepper, diced
- 700g chicken breast, sliced - 1l fish stock - 250ml dry white wine - 5ml
saffron - 2cloves garlic, crushed - 500ml chopped tomatoes - 1/2tsp grated
lemon rind - 250g chorizo sausage, sliced - 400g peas - 700g linefish, cubed
- 48 mussels in shell - 24 prawns cleaned
Method
- Saute onion, pepper, garlic in oil
- Add rice and brown
- Add chicken, season and saute
- Stir in stock, wine, saffron, bring to boil
- Add tomatoes, lemon rind, sausage
- Simmer until most of the liquid is absorbed
- Add peas, linefish, mussels
- Gently stir in prawns. Cook for 5minutes. lid on,turn off heat. Serve immediately
