Paella (serves 12)

Ingredients

Paella150ml olive oil - 600g short grain rice - 2 onions, diced - 2 red pepper, diced - 700g chicken breast, sliced - 1l fish stock - 250ml dry white wine - 5ml saffron - 2cloves garlic, crushed - 500ml chopped tomatoes - 1/2tsp grated lemon rind - 250g chorizo sausage, sliced - 400g peas - 700g linefish, cubed - 48 mussels in shell - 24 prawns cleaned

Method

  1. Saute onion, pepper, garlic in oil
  2. Add rice and brown
  3. Add chicken, season and saute
  4. Stir in stock, wine, saffron, bring to boil
  5. Add tomatoes, lemon rind, sausage
  6. Simmer until most of the liquid is absorbed
  7. Add peas, linefish, mussels
  8. Gently stir in prawns. Cook for 5minutes. lid on,turn off heat. Serve immediately
