Rock Lobster
The East Coast rock lobster is the tastiest around and can`t be beaten for taste. Before cooking or freezing your catch place the lobster in cold fresh water for 5 minutes. This kills them in a humane fashion. Stored in the freezer they should last for 6months without loosing their taste or texture.
Grilled Lobster
Remove the tail from the head section by pulling and twisting. Split the shell down the middle and open the lobster into 2 halves. Remove the digestive tract and rinse if needed. Place halves in a roasting pan shell side up. Grill until shell goes a deep red colour then turn. Make a basting mix of olive oil and butter in equal parts with salt to taste. Baste the lobster with this at regular intervals whilst under the grill. The lobster should be grilled in this way for around 10 minutes. Served with savoury rice and some hot sauces, you have a meal fit for any king.
